Need a dip? I got your dips!

We all know what time of the year we’re in…time to eat, get fat, be with the ones we love, and celebrate the birth of Christ! Normally around this time I’m scrambling for quick and easy recipes that can go to all of the “parties” with me. I’m a fan of warm appetizers, but traveling/work do not make for great re-heated apps! I found some yummy (and very easy) dips. I’m choosing to pair them with pita chips…but you can dip whatever you would like in these yummy creations!

Tomato Pepper Relish:

  • 1 cup roasted red peppers, drained and finely chopped
  • 1 diced Roma tomato
  • 1 tablespoon brown sugar
  • 1 teaspoon balsamic vinegar

Artichoke Caper Dip:

  • 1 (6-ounce) jar marinated artichoke hearts, drained and finely chopped
  • 2 teaspoons capers
  • 2 teaspoons mayonnaise
  • 2 tablespoons sour cream
  • 1 tablespoon grated Parmesan
  • 1 teaspoon lemon juice

Mascarpone-Chive Dip:

  • 1/2 teaspoon freshly ground black pepper, plus extra for seasoning
  • 4 strips bacon, cooked until crisp, finely chopped
  • 1 cup (8 ounces) mascarpone cheese, at room temperature
  • 3/4 cup sour cream
  • 1/4 cup chopped fresh chives
