Weekend in Review

First weekend at the lake after opening weekend (which I don’t count)! Pure heaven…

The T family joined us for a food and relaxing filled weekend. We had the pups with us for the weekend. Friday before leaving work I got an email with the picture below and the following caption “Please take us to the lake…”

That’s all it took for me to rush our the door…this picture makes me giggle. Mac always looks like you’re about to beat him in photos.

Saturday I made a scrumptious french toast casserole. I’m still craving that right now.

FRENCH TOAST CASSEROLE – via cooks.com (adaptations in italics)

  • 1 1/2 stick butter
  • 1 1/2 c. brown sugar
  • 1 1/2 tsp. cinnamon
  • 1 loaf Pepperidge Farm bread white (1 lb.)
  • 6 eggs
  • 2 c. milk (vanilla almond milk)
  • Maple syrup

Use a 9×12 inch dish. Melt 1 1/2 stick of butter and add 1 1/2 cups brown sugar, 1 1/2 teaspoons of cinnamon; make a paste and spread over bottom of dish.

Use only white Pepperidge Farm bread (this recipe will take a 1 lb. loaf). Remove crusts. Layer two slices of bread and fill in sides and ends with smaller pieces.

Beat 6 eggs and add 2 cups milk. Pour over top. Cover and refrigerate. Bake 25-30 minutes at 350 degrees. Drizzle maple syrup on top and run under broiler until brown and bubbly.

Then for lunch Mrs. T (chef extraordinaire) made gourmet grilled cheese and tomato soup. We’re talking chunky, creamy homemade tomato soup and spicy pimento cheese grilled cheese. Makes our weekly grilled cheese and tom soup look like a elementary school’s lunch. Sorry hubs.

The weather cleared and we were able to soak in a little sun on the porch. I’m a firm believer in the power of a little vitamin D. Made some bruschetta (yes Mrs. Sh, the kind you drool over) to enjoy throughout the day.

For dinner I took our family’s stromboli dough recipe and made it into pizza dough. Sorry, you can’t have that recipe but I did make four delicious pizzas. Two were BBQ chicken pizzas, one was a buffalo chicken pizza, and one was a margherita pizza. Yum-o.

Last night we picked out baths, toilets, sinks and faucets!!! It was stressful and exciting all at the same time. I cannot wait to break ground and start posting some serious photos. You will prob be over this house before it’s even finished 🙂  Teaser…
