Slow Cooker Shredded Pork Loin

If you’re going to make this…start the night before.

Slow Cooker Shredded Pork Loin

  • 1 5 lb boneless pork loin, cut in half
  • 10 oz apple juice
  • 2 teaspoons garlic powder
  • 1 teaspoon salt
  • 1/2 cup honey
  • 1 tablespoon dijon mustard
  • 1 tablespoon balsamic vinegar

Place pork loin roast halves side by side in slow cooker fat side up. Pour in the apple juice. Generously sprinkle garlic powder over the roast. Add salt. Mix honey, mustard and vinegar together and pour on top. Cover & place in fridge over night.

In the morning, cook on low for 8-10 hours. It will just fall apart. I pour a little remaining juice over the shredded pork. Freeze left overs with extra broth.
