This salad converted 4 non-kale people into kale lovers! Score!
Tangy Kale Salad
- 1/2 giant bag of Glory Kale Greens (1 bag = 16 oz)
- 1/8 C EVOO (yes, I said it)
- 1/4 C fresh lemon juice
- 1/2 C fresh grated parmesan
- 1/4 C slivered almonds
- 3 cloves minced garlic
- 1/4 tsp salt
- 1/4 tsp fresh ground black pepper
- 1-2 tsp red pepper flakes
- Mix everything in a giant bowl. Serve at room temperature.
Makes 4 decent sized servings. I ate one serving with a 1/2 cottage cheese on the side as dinner. Would be great served with chicken or salmon.
