Weekend Recap

We headed to Knoxville once again. We watched the game attempt. We ate WAYYY too much. We celebrated the marriage of Crystal and Nick. I got to break out my extensions!

I lived with Crystal a few short months while I was in Knoxville back in the day. It was so lovely to see some people that I haven’t seen in well over a year…some even two or three. Cheers to their new life together!!!

Splurge vs Steal

A girlfriend did a post on this yesterday, and I commented on my HD powder swap, but last night it hit me about another swap that I found. Please excuse the quality of pictures coming your way…it’s dark  out and the lighting up in this bia in terrible.

I received a clinique quad during a gift with purchase event that I fell in love with.

It’s almost gone now (well 2 of the colors) so I set out to replace the quad. Easy enough, right? Well Clinique is smart. You cannot buy that quad…you need to buy four different shadows/sets to recreate that look. Sneaky sneaky. So I searched and searched and honestly found one from N.Y.C. for $3.99. Can you believe it???

How’s THAT for a steal vs splurge!!! That’s $77 in savings, and you can take that to the bank…literally. Here are the colors swatched on a napkin…Clinique on top, N.Y.C. on the bottom. Identical.

Spicy Maple Salmon

Not sure why I’ve been on a fish making kick…but here’s another 🙂

Spicy Maple Salmon

Serves: 4 | Time: 20 mins

Ingredients:

  • 1 tsp paprika
  • 1 tsp ground ancho chile powder
  • 1/4 tsp ground cumin
  • 1/4 tsp brown sugar
  • 1/2 tsp sea salt
  • 4 (6-oz) fillets Alaskan salmon
  • 2 Tbps maple syrup (I used sugar free)

Directions:

  1. Preheat broiler.
  2. Combine paprika, ancho chili powder, cumin, brown sugar, and salt.
  3. Rub the spice mixture over the salmon.
  4. Place salmon on a baking sheet and broil for 6 minutes or until not quite cooked through.
  5. Remove from the oven, baste with the maple syrup, and broil for 1 minute or until nicely glazed and barely cooked through.
  6. The fish will continue to cook once out of oven.

House Update: Dang Giiiirl

A LOT happened over the weekend! More tile (we’ve kept them more than a little busy with all of our intricate tile work), custom cabinets installed, mantle poured (needs to be sanded and stained) and the brick painted. Yes, it’s like a whole new house. Just a little more interior trim to go…

I am ready to move in now. I promise I won’t complain about the dust, and I’ll just set up shop in our master closet. You won’t even know that I’m there. Pretty please?!?!

Picked out interior paint colors yesterday, as well as carpet. Oooooo….squealing!

Weekend Recap

Best friend weekend activated! I’ll let the pictures speak for themselves!!! We had so much fun cheering on our Vols, seeing the new AXΩ house, eating pizza at Stefano’s which we somehow NEVER did in college (prob a blessing), and catching up. We fit 5 people in a one bedroom apartment, and laughed our hineys off the entire weekend. Best and I decided we’re quitting our jobs, moving in the AXΩ house and becoming house moms. The husbands can live with us too…

Tomorrow I will have a SERIOUS house update!! Stay tuned.

Monterey Chicken

This is another quick and easy meal, and I bet you have most of the ingredients already in your house!

Hubs and fam gobbled this down last night, and have asked for it again! Good as leftovers too!

Monterey Chicken

Serves: 4 | Time: 30 mins

Ingredients:

  • 4 Chicken Breasts, trimmed of fat
  • 4 Tbsp BBQ Sauce (We like Stubb’s Spicy)
  • 4 slices of cheese (Monterey jack or whatever you have on hand)
  • 1/4 C diced tomatoes
  • 1/8 C diced scallions
  • Chopped parsley
  • Salt and pepper

Directions:

  1. Preheat oven to broil.
  2. Salt and pepper chicken. Cook in skillet (or on grill) until cooked (about 5 mins per side).
  3. Remove from heat, and place each breast on cookie sheet.
  4. Smear 1 Tbsp of BBQ sauce on each breast. Put one piece of cheese on each.
  5. Place in broiler until cheese browns.
  6. Remove and top with tomatoes, scallions and parsley.
  7. Serve immediately.

Drool and enjoy! I would recommend mashed potatoes and broccoli for sides!

Weird day over here…

It started off by waking up at 5:10a instead of 5:00a. I know that doesn’t sound like a big deal but when your minutes are miles that’s over an entire mile I would miss on my morning run. So I had to run faster than normal, which started off my day in a funk. Nothing coffee can’t fix.

Then after the gym, I came home (per usual) and went up to get ready. When I took my running shoe off I stuck my hand into something squishy…

DOG POOP. On my hand, on my running shoe, on the tile…on the cream carpet…all through the house, all over. Somehow my steps missed the white steps (thank you Lord). So that delayed my day a little more while on scrubfest2.0.

On top of that, work has me a little crazed today thanks to people that love to make their procrastination my problem. Cool, thanks for that.

In good news, our house has interior doors and most of the tile is finished. Wham bam, we’re so close to this house being finished, I can almost smell it. Nope, that’s just the dog poop lingering. Door knobs chosen, newel post selected, bead board stain picked, closets laid out. Decisions, people, decisions!

End rant. At least I get to see my BFF tomorrow. Nothing a little wine can’t fix. YAY!
